Green Peppers Stuffed With Spanish Omelette

Ingredients


Preparation

1. Cut the tops off the peppers and carefully clean out the seeds leaving the peppers intact.?2. Peel the potatoes, and cut into thin slices; chop the onions. Stir fry the potatoes and onions in abundant olive oil. Remove, drain, and put to one side for a while. Beat the eggs, and mix with the potatoes and onions; add some salt, and mash.?3. Stuff the peppers with the mixture of eggs, potatoes and onions.?4. Fry the peppers in abundant and hot olive oil, until the stuffing is cooked.


Suggestions:
Cook the potatoes until they are soft, rather than brown, so that it is easier to mash them with the onions and eggs.
